What is there to do in X and Y once I've beaten the main quest and done all the side quests?

Like all the other first games barring gen 1 and 2.
Complete the dex.
Beat the Battle Tower variant.
Catch the third legendary.
Also don't forget about collecting those Megastones and the Looker sidequest.
