It makes more sense for Kecleon.

But for Greninja, implying it uses trickery to fool and mislead ita opponents makes more sense than having its molecular structure change at will.

Protean also refers to changing styles. I think there's actually a style of Protean martial arts out there. With the mental and physical dedication true martial artists, that's sort of how I saw it working for Greninja; it's metal control over its own body is so immense that it can change its type.
