In actuality all it's evolutions are so complex or specific that the only way you will ever encounter them is by researching them and then deliberately forcing it.
The only eeveelutions that could be considered even somewhat random are Umbreon and Espeon, and those would take a long ass time to happen randomly to someone who doesn't know about them.
