What Hitmon uses these the best?

Hitmonchan, Hitmontop or Hitmonlee?

Hitmontop has highest defensive stats and technician
Hitmonchan is inbetween and has Ironfist
Hitmonlee has highest attack but lowest defense

Seems like you want the most power in this situation, if those are all moves you absolutely need.
I'd probably run techniciantop. If you were running stronger moves or something with less priority, you could easily just run fake out+normal gem+unburden hitmonlee

To some extent, but that's where Bulldoze comes in handy to lower their speed a stage or if you have sticky web to help out. That or you could change it to Agility,

Agility is so not worth it unless you already have the power and/or defenses to support yourself, which Hitmontop really lacks if it's not running intimidate.

Suppose so, but those moves should be fine but can be mixed, i'd at least keep PUP for boosting attack and bullet punch for priority and fairies. Again if you pack sticky web then it helps a lot for its mediocre speed if you invest in it.

Yea I was kinda worried bout that. Probably won't be running sticky web. Figure prioritytop can be a great clean up sweeper later in battle and maybe a decent lead with fakeout

From what i've seen, Assault Vest Hitmonchan does pretty solid, especially with Iron Fist boosted Drain Punch and a few coverage moves it can abuse.
