Pokemon gain stat boosts when the evolve. If you never evolve, it, it will never gain that stat boost.

Besides the moves being learned earlier. I'll lose out on more possible stats bonus' than if I just evolved it into Blastoise?

this is the only benefit, sometimes they only learn certain moves in their first stage (mostly stone evos though)
now there is evolite to boost your defenses but that only works for pokemon who get a bigger boost from the item than their evolution. but blastoise has a mega so keeping it as a wartortle is a bad idea.

Blastoise's are: 79/83/100/85/105/78.

You're missing out on 125 base stat points if you never evolve it. And, assuming you're playing X/Y, you won't be able to take advantage of Mega Evolution.
