Stupid question:

What legends have been deemed to be shiny locked so far, overall? Is it just the Tao trio and the XYZ trio plus the Mythics? Or is the Kami trio locked in BW1? Is the Bird trio locked in XY?

nope, also Manaphy is shiny locked on the game it is first transferred too, but if you hatch it on another game it has the 1/8000 chance of being shiny.
