So, a newbie question; Can I check individual IV's somehow? Or their specific number? Im new to this and if I understand correctly the NPC ingame will tell you different things depending on the total number of IV points your pokemon has. Or am I wrong?

You can get a relative indicator of their best and worst IV's from the IV Checker, but not the exact number of all their IV's. However, there are online IV calculators you can use.

At high level? Yes you can use IV calculators.
At lv1? No accurately, you can check if your mon have 31 or 0 IV with the iv checker of course.
What IV do you want or aim for? 30 for HP?
