I'm trying to breed a Hitmontop so I can get that sweet Kalos bred mark in my PokeDex. However the Tyrogues I breed keep becoming Hitmonchans and Hitmonlees instead.

What specifically do I need to do to get one of these bastards to become a Hitmontop? Do its attack and defense IVs need to be the same? Do I need to watch the EVs it gets so those stats don't change? It's driving me nuts

It depends on the IV's. Get some dittos with 31 IVs in Def and SDef and breed them with it. Use Power Items to pass on the IV's. Then just hatch and train/evolve it. Train it's EV's when levelling it in a stat not def or sdef.

I use a Tyrogue Friend Safari, catch some and I always find one with equal Attack and Defense, then I feed it a Rare Candy

it's attack and defense stats need to be equal. ivs and evs don't matter. when you breed your perfect one, ev train it in such a way that it's att and def will equal at lvl 20 (or whatever level pleases you). once you've got your top you can use a reset bag to reset it's evs to train it properly
