Because they're extra stat boosts. If you're playing to win, there's no reason not to have them.

I've already been in a few battles this gen where I would've lost without those extra few attack or defense IVs

You know what my problem is with IVs? It's Pokegen. Think about it, without Pokegen, it would be much harder to get a perfect IVs Legendary Pokemon, and that would make battles against non-legendary with perfect IVs more fair. Please feel free to disagree with me, because this is something i have never shared with anyone and i would appreciate some others points of view.

That's all there is to it. The complicated part is breeding for them but it got a lot easier this gen.
