The best way to take care of hidden powers is not to care about them at all. HP Ice and Grass are useful on some stuff and relatively easy to get, but stuff like Fighting or Fire is pretty insane and can let you lose important speed ties.I wouldn't breed for any HP that requires more than two non-31s.

Actually, I have yet to really use Ludicolo on my cartridge team. The fact that it can't relearn a couple of its moves after the stone evo keeps me away from experimenting with some things. Unfortunately, this affects most stone evos introduced before this generation.

I have 20 boxes for the different types (Normal, Bug and Water get 2, Flying gets none), where most stuff is sorted by its primary type. Additionally, 2 boxes for starters and 3 for legendaries and 2 of competitive Pokémon. Leaves me with 4 boxes to juggle with.
