Now, I'm playing just so I can beat my friend who is playing at the same time. Is it better if we fight via Pokemon Stadium or link with our starters at the same equal level, or an arbitrary goal, like every badge? Would it be a bitch move to trade myself the other starters?

You should ditch Butterfree for a Rock or Fighting type, like Geodude or Machop which you can catch everywhere. North of Cerulean you can catch an Abra as well, which would be a good idea because Psychic types are completely broken in Red and Blue.

If you're battling I guess after every gym would be the best way and Stadium would be a cool way to do it.

Also trading yourself the other starters would be fine if you really wanted to, there's just not really any point since you can catch Oddish and Poliwag at that point anyway and Fire types are pointless since you have Pidgeotto.
