If we're going to nitpick, it serves as much purpose as the ninja turtles' masks. It just there to look strider-ish, not to make any sense whatsoever.
I mean christ. I imagine it wouldn't run on two feet, but rather it would live in swamps or mangroves, dashing through the trees, jumping from one to another, and diving in and out of the water whenever it sees fit, but then it would be really easy to either get its tongue tangled on some branch or even torn by any thorn or broken splinter that it grazes by.
