Maybe they will make you decide if he starts out with a knit hat or if he starts out with white hair in an headband. I guess they will propably make the default hat look like this:

The options would be: white, blonde, ginger, ash brown (default for May), chocolate brown, and black. After advancing in the plot (like at the fourth gym) you unlock honey-colored hair, and also the greyish hair from FRLG Leaf and Red. When you beat the league you unlock Wally's (green) hair-color among other unnatural and semi-unnatural hair-colors.
Wonder if Wally still has green hair, cuz i guess they decided to drop weird-looking hair colors except for the villains or something. And be kinda more racial appropriate. In Unova everyone had natural-looking hair colors (some had blue or purple- or teal - hair that might stand in for black) except for Cilan and the Striaton Triplets. (I can see a strawberry-blonde Wally, light blonde Wallace, platinum blonde but 25% greying Steven, light reddish-brown haired Flannery, dark-ish auburn Sidney, and ginger Brawly.*)
But sometimes it looks like it's illegal to have 2 gym leaders\elite four with the same hair color.
*he seems more of a ginger than dark blonde.
