If I'm breeding with a parent 31/31/x/x/x/31 with destiny knot, shouldn't that guarantee me at least two 31s for the offspring?

Get the nature first, then use the destiny knot and everstone together. Otherwise you'll rage when you get a pokémon with perfect IVs but wrong nature.

Yeah but it's important to note that they do overlap. ie. the use of a power item will allocate one of the destiny knot's 5.

one parent has 31/31/x/x/x/31 and one has the right nature. I would swap the one with the nature if the offspring ever got good IVs but thus far no one of them has

Is it easier to use a parent with the right nature and another one with a power item then, and keeping replacing the nature parent with the offspring and changing to the next appropriate poweritem holder?

It's worth it early on, but once you get 2 perfect IVs on both parents you should switch to the destiny knot.

Yes. Give the Everstone to one with the right nature and Destiny Knot to the other.
You'll wanna replace the 1 IV Parent with a 2 IV one once you get one and go on from there replacing the parents as you get better offspring.

Yeah they overlap, and I've been doing this I just haven't gotten a single useful offspring at all.. which led me to think I was doing something wrong

Just shit luck then if you're doing it right. It can be a struggle to get decent offspring early on, but if you can get a 6IV ditto or breed yourself 6IV males of every egg group then you can save a lot of time later on if you plan to breed lots of pokemon.
