It's the simple "rock-paper-scissors" dynamic. It's simple and easy to understand.

If we had, say, Ground, Poison, or Bug starters, you'd have little kids going "WHAT'S WEAK AGAINST POISON" etc.

Fire beats Grass, Grass beats Water, Water beats Grass. Simple.

But grass was seen as the overpowered starter in the original game because the first 4 gyms were weak in some way against grass types.

Like how birds are higher up and are more likely to be hit by lighting, you can't punch a bird, and mind of body, and psychic is weak against dark bug and ghost, because they are things people are afraid of.

I guess fried chicken made sense to me.

Grass/Fire/Water can be figured out using real-world logic and is easy for kids and newcomers to understand.

A triangle like, say, Dark/Fighting/Psychic (which isn't really a triangle due to Dark being immune to Psychic, but let's just go with it) isn't as simple.

If they were smart, they would have called Ground-type Earth and Flying-type Air from the start, and have four starter types after the four basal elements: Fire, Water, Earth, Air. But they had to fuck it up and put Grass (which should be Plant) in there instead.
