But...
Why does a small rock guy evolve into a big rock guy with 4 arms and then evolves into a rock lizard with only 2 arms again?

Why even give graveler 2 additional limbs anyway?
Most pokemon follow a pattern, geodude just flips his detritus ridden finger.

I remember reading this silly fan theory headcanon about how Graveler is supposed to be traded with Machoke, which is why Graveler suddenly gains reptilian features and Machoke gets an extra set of arms and a less reptilian face

Theory that I read somewhere.
You know how Karrablast and Shelmet evolve when you trade them for one another?
Karrablast takes some features from shelmet, it basically takes its shell and uses it as armor, and Shelmet... well, loses its shell.
What if they were already thinking about that back in RBY, with Golem and Machamp?
Graveler loses a pair of arms and gets a reptilan face and limbs, and Machoke gets that second set of arms plus Gravelers' flat face.

no because he will evolve no matter who you trade it with. The design does sort of reflect what you're saying but it's probably just coincidence

that's just silly, pokemon don't do that.

it's not like kadabra losing its zener card symbols gave gengar ESP abilities, especially when it mega evolves. that'd be as silly as gengar's clairvoyant third eye being the same color as a kadabra-

well, it's not like kadabra lost its tail and its ability for its body to move without psychic powers, only to haunter to gain, not only a complete, able body, but a tail as well-

you guys might be on to something

Something more along the lines of this. Some pokemon are more 'unstable' and when they get sent through a link cable, the high pressure, the digitization, and any leftover radiation causes a mutation to occur that makes the pokemon much different.
