On the May in the anime thing... I'm feeling 50-50. The VA thing could definitely impact their decision to bring her back, but as people ahve pointed out, there are multiple elements to fanservice and the people in charge of Pokemon anime have admitted to the show's repetitive nature because some kids outgrow it, while other kids get into it. I don't think the target audience (kids) would be too pissed off about a voice change in a character that hasn't showed up in several years --perhaps even before their time.
We will see.

I hate to bring up something morbid, but I wouldn't be surprised if the voice cast of the principle cast dies off during the shows run because I don't see it ending anytime soon. I hate changing voice actors (the English VA switch bothered me) but in some cases it's unavoidable. In this case, it would be done for respect out of the original VA's health on not because of le Jews. And Japanese VA switches are not entirely unheard of. Look at Doraemon, for instance. The voice cast has changed there because of its long run. Eventually a time will come when they will need to permanently replace voice actors.
Besides, this would be like a two-to-five episode thing. It's not like it would bar Kaori from coming back if she ever recovered, nor would it erase the contributions she made.
