All the other ways of dealing with evasion do not actually counter it. Never-miss moves have low Base Power, except Aura Sphere, which has incredibly poor distribution (Lucario is really its only good user). There is also not a Never-miss option for every type, meaning most Pokemon that might use these already weak moves won't get STAB. The strongest Never-miss option in OU is Swift Espeon, which for example can only manage 27% against a Gliscor even with no SpDef investment. Using Never-miss moves not only weakens your offensive potential (ie. running Shock Wave instead of Thunderbolt hurts your damage output by 35BP), but also offers no real benefit; Being able to reliably hit your opponents doesn't matter if the damage you're doing is negligible.
Evasion also makes lower-accuracy moves worthless. Focus Blast, Fire Blast, and the like will all have dismal hit rates if evasion were in use, meaning weaker alternatives would need to be used, dragging battles on even further.
Abilities that ignore evasion are few and few between. with only Keen Eye and No Guard being viable (Compundeyes reduces the effects of accuracy reduction but does not prevent it) and of all the Pokemon that get them, only Machamp is any good.
Also keep in mind that countering evasion is not like countering a specific Pokemon. Every Pokemon can learn DT, which means that any "Evasion counter" you might have needs to be able to deal with EVERY POKEMON IN THE GAME, which is obviously impossible. Your only option is to load your team up with several evasion counters, which as noted above really just makes you weaker.
And finally (and most importantly), evasion isn't fun. It's not fun to sit through an hour-long battle where nothing happens on most turns.
