Turning EXP share for the sake of difficulty is the same as finding TM flamethrower and choosing not to teach it to your special attacker fire type who needs 10 more levels to naturally learn it. You're choosing not to teach it flamethrower so you'll 3hitko other pokemon with ember instead of 1hitko'ing them with flamethrower, giving the enemy pokemon a chance to wittle down its HP with their pathetic stats and moves.
Obviously that doesn't make it feel satisfying to play, just like turning off EXP share and randomly turning it on to save grinding time is not satisying to play at all.
