Why didn't you use a ghost pokemon with Curse?
I mean they can only cure that move by switching out and Toxic has no effect on the Gengar line as far as I know.

I saw one on the think fast tournament that was Seismic Toss / Minimize / Soft-Boiled / Substitute

I managed to knock off its eviolite but then I couldn't hit it for the rest of the battle

not actually that bad of a strategy. KO one of the opponent's things and then just timer stall since battles were maximum 10 minutes

this is called "identifying your win condition" and in this case, you should've seen that you needed to preserve your physical attacker to deal with blissey so you should've played more carefully with it
