Every pokemon gives different EVs, for example zigzagoon gives speed EVs, poochyena gives attack EVs and etc.
There are 6 kinds of EVs, one for each stat.
EVs increase your stats for every 4 EVs you have, for example if you kill 4 Zigzagoons which give you 1 speed EV each you will have one more point into speed at level 100.
EVs cap at 252.
