Evas are angel clones with a human souls inhabiting them. A Eva 'syncs' with a pilot when the pilot is someone close to them. Unit 01 has Shinji's mother, 02 has Asuka's, it's never stated who's in 00 but it's likely that its the First Rei before she got killed before the series began.
Basically, there are two types of basic angel, Adam and Lilith, that create life. life from Adam are the angels as labeled in the show, big powerful things few in number. Spawn of Lilith created life on earth was we know it, animals and humans, so technically all life on earth is angelic too. Each were sent by an alien race to populate distant worlds, but no two of them are supposed to arrive on the same world, and if they do they're both supposed to be deactivated by a special weapon they come with, the Longinus. Lilith's longinus got destroyed in her crash landing when she landed on earth with Adam already on it, so only Adam's activated, making him dormant till the Second impact. Then the events of he show begin.
