Have a general idea about the role your pokèmon will fill (physical or special attacker, staller, annoyer), go to Serebii and check its moves. See what's its best STAB (physical or special), if it has interesting status or recovery moves or a variety of coverage attacking moves etc...
Also keep in mind you're not playing a 1v1 game. Sometimes a set can look worse than another on paper, but better suited to a pokemon's team mates. For example, the physical Greninja I run on my Trick Room team is usually laughed at, but its purpose is to be a cleaner and get the fuck out of my way with U-Turn when I want to set up another TR.
Build every pokèmon of your team at the same time, choose coverage moves accordingly and try that shit on wi-fi. It's fun.
