Actually Hariyama already has gargantuan HP so you'd invest in Def like so
252+ Atk Talonflame Brave Bird vs. 0 HP / 252 Def Hariyama: 338-402 (78.7 - 93.7%) -- guaranteed 2HKO
Not that it's a good strategy to have Hariyama lose over half its HP, but it can still Whirlwind it at least.

Not him, but what are you smoking? You're better off investing 252 in HP than 126 in def and sp.def, regardless of how high his HP is.

What you're suggesting would work in the case of Chansey, or a physically defensive Hariyama. You've left his special defenses open to serious damage.
