Well /vp/, I think I'd really like to create a living dex in Pokemon Y (pic related). Problem is, I have no fucking clue how I am supposed to go about it. I mean, where do I even start? Which games will I need to grind through to get what I need?

That's weird, I'm pretty sure my living dex is complete, but mine doesn't perfectly fill out the boxes.

I completed my first living dex in Gen 4 as a bored teenager. Really just start with what you have, fill out the slots, and work from there, then assess what you still need to obtain and hit the GTS. I've had it easy the last two gens since I've only needed the regional dexs.
