Choice items could take up both slots. I think it could be viable for less powerful items/consumables to take up 1 slot.

Dude, litterally any combination of two items that don't blatantly suck is better than any one item that is really good.
And if every good item becomes two handed then anything will change because one life orb is better than one wise lens and a spooky plate or some shit

Like some of the pokemon in tcg
Like flame body wouldn't be an ability, it would be an pokébody, so that it would technically have 2 abilities

Yea I was thinking something like this. Focus sash + berry I think would be ok. Or something like absorb bulb/cell battery can count as one slot and safety goggles.
