well the first gym you would have azuril or pansage....

I would say go fairy if you want large gaps of no pokemon.

Grass has a lot early on so you will have a lot to pick from

You couldn't even get like 90% of the fairies until like midgame

Earlygame Flabebe is pretty awful until moonblast, eevee takes grinding, slurpuff/aromatisse are version exclusives, Klefki is at least like 6 gyms in

It just seems like it would be boring as a whole

Nigga, this is Kalos. You've encountered half the regional dex by the time you reach Dedenne.

Anyway, I'd suggest use only grass/poison types such as Bulbasaur. You may import a Larvitar as your pseudo-starter when you reach Santalune City.

If you think that's too easy, then when you're done, do a mono-ice run with a Snorunt pseudo-starter.
