I went with offensive EVs for Volcarona (instead of my favorite 252+ Def spread) because I thought I'd need the immediate firepower in emergency situations. However, I haven't even had to use Volcarona in the first seven battles because Gengar and Umbreon can alternately take down each team I've faced.

Tbolt please
Swap toxic for something else; 3vs3 battles are short and oftentimes the opponent can out stall you
Scrafty with a rock move would wreck your team
Consider switching out umbreon for say, Durant; takes nfe hits from dark/ghost/any other moves besides fire moves aimed at gengar, and can switch into volcarona if there's a fire move

I lifted it from my favorite competitive Gengar set (though the EVs aren't exactly correct for that set), and it's done pretty well so far. Taunt is my least-used move, though. Lot less useful against the AI.

As for the DPPt as fuck Umbreon set, I just wanted to use Umbreon.

I'm genning all these mons on an emulator so any suggested change is nbd
