I never actually upgraded it. I had upgrades for every weapon but the katana and ended up beating most things with a wet sock. Made the game more interesting, though. Just do the calcs. Full heath bold clefable against a guts burn orb facade from conkel, full health 252hp/252spd cradily against focus blast from garde.
the conkel was at half and would've died from moonblast and I run mirror coat on cradily specifically to deal with shit like garde and megazard y.

Assuming by "gimmicky" you're not expecting the best sets but still not shit ones, some fun ones I like are physical Greninja, scarf Super Luck Absol, and CB Scolipede. I also like putting Weakness Policy or Assault Vest on things that don't normally carry them.
Alternatively, if you just don't like cookie cutter sets, you can take a standard set except toss on an unusual move or item that you think would work well. I do that half the time.

I love using beat up weavile in singles. You need to build the team with a lot of high attack mons - I used t-tar, haxorus, espeon(support), excadrill and mega-gyarados (with rest talk).
Equipping weavile with something like king's rock means that, if you use it early enough, youcan easily blow through half of an unsuspecting opponent's team. For some bizarre reason, beat up does not make contact, so aegislash can't kings' shield it away
