When I looked at Gardevoir sets for doubles, I saw that many of them expend some IV in HP or Defense to be able to barely survive certain physical attacks (like Talonflame's BB). 4–8 HP IVs kinda throws a wench in that, doesn't it?

With how the PID works, they're probably not legal with any good IV spreads. IIRC, there was only like 420 possibilities for the Mystery Mew (and none where shiny, so anyone who claims to have gotten a shiny one was lying through their teeth), and I expect Chansey probably had a small range of possibilities like that.
But it's a simulator, so it really doesn't matter if they're playing with perfect spreads that don't exist with that pokemon. Be rather a pain if they cared about specific stuff like that.

Even with the stealth rocks weakness, I still used focus sash, as speed boost + focus sash allowed me to revenge kill in a lot of desperate situations.
Yanmega is still my favorite pokemon, it's just too bad power creep has left it a bit neglected. It's harder and harder to justify bug type attacks that aren't u turn, and air slash is just too week when 90 seems to be the minimum for BP nowadays

Anyways, steel is fantastic defensively, but still has three huge crippling weaknesses in ground/fire/fighting. Fortunately you can have an aegislash/skarmory/heatran defensive core to play around those immunities.

Ancient power also isn't too great, as a neutral flamethrower does more than a 2X super effective ancient power. The only time I can see it being useful is against megacharizard Y, and that's about it. although MCY probably is a huge threat.
Instead of ancient power you can always run another utility move like substitute. Heatran forces a lot of pokemon to switch out because his unique resistances, you can sub up whenever you're almost positive they are going to switch, then get a free fire blast/will o wisp against the physical attacker that is most likely trying to earthquake/close combat you
