Notice how Lucario just stood there and took several thunderbolts in that match? It's because Korrina doesn't know how to tell it to dodge. Beforehand when Lucario fought on instinct it just dodged stuff on its own and it beat Pikachu with zero problems. It not having any projectile moves really doesn't matter when we were shown that Mega Lucario is capable of moving faster than Pikachu can react.
It's the Pokemon anime so I don't know if was actually a subtle detail they planned out, because it makes a lot of sense. Given the show's history it might just be a coincidence it works to explain it like that.

Ash won because he's simply a better trainer trainer than Korrina. Fletchinder and Hawlucha barely had trouble in their battles. Pikachu was powerful enough to face off against Lucario, and he had more experience. We're talking about the electric rat that's on par with a veteran's trainer Latios. Hell, even the Diancie movie showed that Pikachu's TB can hold its own against Yveltal's Oblivion Wing. In a serious match, Korrina is practically outclassed by Ash.
