How do I deal with this shit in 1 vs 1 if I don't have a grass type/magic guard/anything immune to Leech Fucking Seed and can't OHKO?

Just keep hitting it until it runs out of subs and protects and then kill it. Remember, if it's subbing it's seeding, and if it's seeding it's not subbing. As long as you constantly attack there will never be a scenario where it is both behind a sub AND uses leech seed; assuming it's not 1 of those horrible sashed level 1 ones of course.

Almost any Mon with Infiltrator:

Tentacruel also takes a massive shit all over Whimsicott. Easily bulks all special moves, OHKOs with Sludge Bomb and Liquid Ooze damages Whimsi in case of Leech Seed.
