Every other competitive game is full of mechanics like these. Why should Pokemon be different? Keep in mind it's not a LITERAL coinflip - it's based on the experience you have with your opponent and the situation you're in, and you pull the trigger on what you need to do.
Attacking or statusing aren't even the only two options. You could switch? Just like they could switch... At very least getting mega lopunny out can keep aegislash from coming out safely. But then, like you said, they could possibly send out Thundurus, but Lopunny has access to moves that would hit Thundurus such as ice punch, so you could have it come in on that. But then aegislash isn't really hurt by ice pu-OH HO HO HO! More mind games!
See, like I said, Pokemon is a competitive game like any other and if anything it BENEFITS from having situations like these where either player can come out on top based on their experience and the information that is available to them on their opponent. It's the kind of "randomness" a real game SHOULD have, rather than card draws and dice rolls. Aegislash is admittedly pushed a little too far but when you understand it it's actually FUN to play with and against it. Literal shitmons can stand up to aegislash if both players on the same competitive level.
