Thing is, even absolute max defense crustle has a small chance of being 2HKO'd and that's if you avoid stealth rocks. That means that you can't switch in, so it's a check, not a counter. So here's what happens assuming the talonflame player isn't an idiot.
Talonflame is out, and kills galvantula.
You switch out crustle.
Talonflame switches out until crustle is around 50%, then kills you.
Or
You want to save galvantula desperately, so you switch out to crustle. Crustle takes a brave bird on switch, and a brave bird next turn. There goes your line of defense.
Anything that talonflame can kill will get killed, while you have to sack things in order for your check to safely switch in, then all talonflame has to do is switch out again.
