in order to get good stats i need to evolve my pokemon to his last evolution ?
or lets say a fennekin or a shinx can have good stats just by leveling?
would need some special training ?

yes they can have good stats, and yes there are boosts to stats that only work when they evolve. by special training you mean EV training? there are many tutorials on how to, not hard at all just takes time. alternatively you can use XY's super training. so just train whatever stats you want. last but not least if you want to use unevolved pokemon eviolite is a pretty good tool to boost their defenses.
