Is pangoro bulky enough for something like this?

One of thestrongest Knock offs, and Drain punch. Its going to get more usage in the first two or three months for sure, but dont expect it to break UU. Its just an offensive, less popular Scrafty

I'd think Scarf would probably better to run because with its mediocre bulk it works best as a hit-and-run attacker.

Keep Adamant, but run
4 HP/252 Atk/252 Spd
Iron Fist
-Drain Punch (reliable recovery if no cleric on your team)
-Parting Shot/Knock Off (Knock Off is such a buff for this thing)
-Elemental Punch (Thunder Punch is best for this particular set because it hits 8 more Pokemon SE than Ice or Fire)
-Poison Jab (for Faries)

That's what Scarf is for though. Off of a decent base 124 Attack, its Knock Off is going to be doing pretty good damage.

It hits 322 which isn't terrible... It can outspeed most Faries that pose a threat to it. Only problem is it doesn't hit that crucial base 100 speed tier.

Run bandgoro and use drain punch to offset the damage you take, with a bulky EV spread optimized specifically to take special hits since special attackers typically have worse physical defence and you get more hp back from them.
