How about a Pokemon based on some real science? Like for example, the way multiple phenotypes exist. One species of Pokemon could actually have different types. For example, a cocoon Pokemon evolves into either a Bug/Psychic or Bug/Dark butterfly, and it would be a surprise as to which you'd get.
