Imagine if Gamefreak created downloadable Episodes for other event pokemon? Would this interest you? Would you pay for extra content like this?

Depends on how much they sell them for. I would rather not buy them considering they should just be put in as post-game content. But they would obviously contain pokemon you wouldn't be able to get in-game so if GameFreak were jew enough, they would probably get a lot of money out of DLC

They've said they have no intentions of doing DLC althpught if it they released an eventmon that gave you something of that size I wouldn't be opposed to it.
