EVs are added as stickers that you put on your Pokémon.
IVs are randomised at the start of the battle to make it more unpredictable.

Each form of Castform is changed into a separate Pokémon because the 3DS isn't powerful enough to handle switching between them. Cherrim is just removed outright, for similar reasons.

Mewtwo is removed from the game only to be DLC exclusive (can't trade to anybody).

Pokeball Pattern Vivillon becomes a new pokemon but with the exact same stats, type and movepool as Vivillon

That's only cause Smash has so much happening onscreen. We could have way more detailed battle environments in full triple battles at 60fps 3d and it would still be less than what Sm4sh is pushing. 60fps should be a cakewalk with a turn-based game as simple as Pokemon, GF is just super incompetent.

And it's not like Miiverse even matters when we can't take screenshots of Pokemon

The Type Chart is completely overhauled.
