It's the same reason the rival and team leaders don't have it either.
All models are removed, both of Pokemon and people. The only models within the demo are the ones actually used in it. Everyone knows that models take up a lot of space and it's a nobrainer why they were removed.
The fact that trainers and Pokemon not found within the demo lacks models do not help the more Megas theory. Since we have the small dex figure, but no the high quality one.
Let's face it people, there are no more Megas.
