Using Beauty as example, it's on the right side tip. The 2 cats directly next to it are Cool (top) and Cute (bottom right), so using a Cool or Cute move during a Beauty contest won't add or subtract from star rating.
Likewise, Clever (bottom left) and Tough (top left) are on the opposite end, so using those 2 type of moves during a Beauty contest will cause the star rating to drop.
No idea about dazzling either, I plan to play around more with it once I get more badges. I went on a contest spree after beating Winoa, managed to get Masters in every rank PLUS beating Lisia's cheating Altaria. Feels p good, man. Contests in ORAS are much easier than RSE (the mechanics were dumbed down a lot imo), but they're not hard with some planning.
Also once you max appeal in any of the stats, don't forget to pick up a colored scarf from the Pokemon Fan Clun in Slateport and have your participating mon hold it during the appropriate contest (blue for beauty, pink for cute, etc). It's really easy to score top appeal during the appeal round, that lets you win even if you didn't do so hot during talent round.
