Well, Tauros doesn't look all that spectacular in any sprite.
I'll just cheat and go with my overall favorite with HG/SS Dunsparce since it's the only time they got it right.

Venomoth in Yellow looked nice.

Yellow had really good sprites, some are better than gen 2.

Charizard looks so bad in pretty much every gen, despite being the genwunner poster boy.

Why did they make the GSC sprites so hideous.

They may be on model, but the color choices and highlights don't look as nice as Yellow's.

Spritefag here - my guess is that since they really wanted to emphasize the expanded color palettes of G/S, they didn't want to use mono-color sprites again. And when you're using two different colors on one sprite instead of two shades of the same color, flat shading with some occasional dithering looks better than smooth shading throughout - you can see where they still used smooth shading on mons like Charmeleon and Mewtwo, but not for stuff like Ho-Oh or Charizard.
