Scyther only evolves into Scizor because of its exposure to the Metal Coat combined with electrical voltage, i.e. the Pokémon Trade Machine. If you gave it another item, say, the Lovely Orchid, it could become the aforementioned Bug/Fairy mantis. Not that GF would, but they definitely could. They did it for Gloom and Vileplume/Bellossom, Poliwhirl and Poliwrath/Politoed, Slowpoke and Slowbro/Slowking, etc.
