Pokedex completion question

completed nat dex on xy but i have a quesiton
so yeah do you level each of your pokemon to evolve and if so how did you do it?
Like take a bunch of pokemon to the tripple battle food restaurant or something and level them up evolve, then get another batch and repeat or how do you go about it?
