I'm having a hard time thinking of things that would make the games more enjoyable for myself without it being less accessible to 6 year olds. I don't really think the 8 gym leaders/evil team/E4/Champion structure really needs to change.
I think for starters having larger areas would be a great thing. Play up the whole exploration/adventure angle more. After all, Zelda is for kids too but that still occasionally has large fields for you to run around in, and the dungeons are at least more complicated than the Pokemon ones. How small the areas feel became especially obvious once they went 3D with XY, even though square for square they were basically the same size. 3D offers a lot more possibilities other than just looking pretty so I hope they plan on expanding on that.
