But on the other hand, Metagross will never run Hammer Arm+Earthquake, or Ice Punch+Grass Knot. These combinations mean it misses coverage on a ton of things.

A bulky water (threatened by GK) paired with something like Gliscor, Lando-T (threatened by Ice Punch) can cover all sets. It's also countered by Skarmory (running Counter,) Bronzong, and Mandibuzz who can counter every set.
Utility moves, which one who thinks Metagross is ban worthy would bring up when arguing why it should be banned, only make its problems worse. Pursuit, Agilitiy, and Bullet Punch mean missing a coverage move, opening it up to a bunch of stuff.
Mega Diancie is good but not banworthy.
Mega Sableye is the most likely thing to get suspected.
