Probably treated like tennis where trainers compete in singles and doubles, with the added formats of triple and rotation battles. Maybe even a team battle with one trainer per pokemon six-on-six. End of the season there'd be a tournament for the junior league champions title. Universities would have teams, and then the best of those players go on to professional level pokemon battling.
Of course the high school teams would only have access to pokemon in the local area, so mountain schools would regularly get sweeped by coastal teams. To fix this, people willing to go on explorations to find and capture the best wild pokemon would be needed. This would be more like the traditional games, minus gym battles.
Throw in breeders that cater to high paying pro teams, giving the player the option of choosing between the battling, capturing or breeding routes, and I think you have enough material for a game, or at least it's own show.
