With Weavile you could give it a Choice Scarf and just use Icicle Crash if you're afraid the opponent has Scarfed his M-Ray , have an Intimidate user, or a Prankster with T-wave or WoW. Hell Feather Dance Murkrow with Taunt/Haze can really shut one down.
It is not hard to come up with strategies to defeat ONE pokemon. And if you feel nervous just toss in a Wide Guard and Follow Me user into your team, and maybe even Quick Guard for those Extremespeed moments.
