It happened with magic coat and magic bounce, why not other moves?

Thats because something like Magic Coat/Bounce requires you to predict the exact turn your opponent will use an exact type of move they may not even have.
You also can't switch it in to reflect any moves since it requires a turn to use, from which they'll know what you're doing and just switch out, and/or they would've already done it e.g set up stealth rocks.
Abilities that are useful for switch ins are often the most used; Intimidate since it'll weaken the attack you switch into and either mean they fight with less attack or be forced to switch.

Plus on top of actually having to predict and be in battle correctly you also have to choose it over another move, both in your moveset and that you use that turn.

Magic bounce is bullshit you Basically have 5 moves and can use 2 at once.

Auto Trick Room / Gravity would be great abilities along with hold items that make the duration last for 8 turns instead of 5.

I more had the idea of immediately switching a hindering item with the opponents item. Pickpocket requires you to not have an item and be able to hit your opponent first.
