Every time you do a boss fight, check what the pokémon alongside the boss is, then check to see if it can learn Endeavour in the main series games. If it can, just stay in the boss fight and kill those pokémon, you'll catch like 15 or 20 before they stop spawning and there's a fair chance one will be gutsy.
Things you kill in a boss fight also seem to have slightly higher average power than stuff you fight normally, especially in legendary battles. Groudon is great for this by the way, since the Darmanitan he spawns can get Endeavour and has massive base attack.
